Mango Salsa

In honor of steeler sunday, my family had a little get together today with some friends. I wanted to make a healthy but tasty option. I decided to be brave and try something different: Mango Salsa. I have a pretty bland palate so I wasn't sure what the crowd would think. Luckily my critics loved it!
Here is the recipe if you are interested:

Mango Salsa Recipe

Ingredients

1 ripe mango, peeled, pitted, and diced (about 1 1/2 cup)
1/2 medium red onion, finely chopped
2-kiwis
3 Tbsp fresh cilantro leaves, chopped
3 Tbsp fresh lime juice
Salt and pepper to taste

Combine all of the ingredients in a bowl. Season to taste with salt and pepper.

Too bad the steelers did lose AGAIN! Flex was sad :( or maybe it was just the silly scarf I made him wear.


As far as training goes, this was my week 1 of my 5 month training plan for New Orleans. I'm not gonna lie~ it was rough. Especially with my burnt foot.... I ran on it all week and it's not looking much better. I'll spare you from pictures of my bloody sox. It's so hard when silly things like this happen. Mentally I'm thinking, "Ok it's week 1 suck it up Heidi it's just a stupid blister". Then the rational side is saying, "Bad burn on your foot what the heck are you doing"? Fortunately, tomorrow is a bike/swim day so hopefully by Tuesday I'll be ready to run.

  1. I don't want to sound like D. But I don't like you. I'm deathly allergic to mangoes. But I love them. I miss mango salsa.

  3. Salad sounds great! take your time and let the burn heal!! it isnt a nornal blister adn cpould hurt you longer! have a good swim!
