Going Green Part II

Yes Heidi has gone missing once again. This time the culprit was Mardi Gras and IMTX training.
Despite my absence, I would love to share my latest clean recipe obsessions:

1). Heidi's Paleo Pasta Replacement
Ingredients:
1 TBS olive oil
2 zucchini's cut into strips using a peeler
1 tsp garlic minced
3 TBS fresh basil chopped finely
1 lb ground beef/turkey/chicken if you would like
2 cups tomato sauce

Directions:
Heat oil in skillet on med/high. Place zucchini in skillet until softened (30 sec-1minute)
Top with sauce, meat, and basil
Enjoy!

2). Heidi's Double Green Smoothie

(I made this smoothie using the Vitamix)
Ingredients:
1/2 cup soy, almond, or coconut milk
1/2 cup chilled green tea
1-banana
1-cup fresh spinach
1-cup pineapple (frozen)
1-tsp honey

Directions:
Mix all ingredients in the Vitamix and rev it up to a level 10 until desired consistency is reached.
Amazing!

Hope you had a blast at Mardi Gras. Hope you enjoyed riding your bike in the wind too. :P

Have a good one. :)

Glad to see you are able to enjoy both!! The zucchini ribbons are so pretty like a pappardelle pasta.

Mardi gras pics are supposed to include flashing boobs. I'm not suggesting you do that (married), just pointing out the common misconception.

Glad you had such a fun week!

I absolutely love finding new paleo recipes, thanks for the "pasta" one. I will have to try that!

I have been obsessed with spaghetti squash =).

Thanks for posting the recipes - I never thought of putting green tea into a green smoothie, but will definitely have to check this out!

Mardi Gras looks fun... I've yet to experience it myself!
