Fueling the Week

I've been flying solo for a few weeks with the hubby kicking it the Caribbean. Another day at the office for him....
With that said staying properly fueled has been that much harder. I feel like there's so much more to do and so much less time.

To stay properly fueled throughout the week, I ultimately rely on these two staples:

To help stay on top of things I've been making a large batch of steel cut oats and quinoa/veggie combo to last me a week. Although I'm definitely sick of the same stuff towards the end of the week ~it's a HUUUUGE time saver. Especially given that steel cut oats take a good 20-30 minutes to prepare. My favorite quinoa recipe is the black bean recipe I posted a few weeks ago.

These items are also conveniently gluten free.

In other news this week, I have joined up with a new local triathlon team. I am in dire need of new training partners and some new triathlon friends in the NOLA community. Regardless of how it works out, I LOVE LOVE LOVE their style.
So far they've been pretty awesome and fast and I'm looking forward to many hurt fests in the near future :)

  1. Hope hubby is back home soon.

  2. ohhh love the jersey! and i want to try the black bean dish. yummo!

  3. That's an awesome jersey! Yay for joining a new team!

  4. Holy cow - that jersey is AWESOME! Congrats on joining a sweet team...with great style!

  5. Yeah... I've seen Hurt Inc around before and their jerseys are pretty cool. Hope they are just what you need!

  6. That may be the "awesomest" jersey (if that is a word...) Congrats!

  7. I would join just for that jersey (although the team aspect would be awesome too!)
