I've been flying solo for a few weeks with the hubby kicking it the Caribbean. Another day at the office for him....With that said staying properly fueled has been that much harder. I feel like there's so much more to do and so much less time.
To stay properly fueled throughout the week, I ultimately rely on these two staples:
To help stay on top of things I've been making a large batch of steel cut oats and quinoa/veggie combo to last me a week. Although I'm definitely sick of the same stuff towards the end of the week ~it's a HUUUUGE time saver. Especially given that steel cut oats take a good 20-30 minutes to prepare. My favorite quinoa recipe is the black bean recipe I posted a few weeks ago.
These items are also conveniently gluten free.
In other news this week, I have joined up with a new local triathlon team. I am in dire need of new training partners and some new triathlon friends in the NOLA community. Regardless of how it works out, I LOVE LOVE LOVE their style.
So far they've been pretty awesome and fast and I'm looking forward to many hurt fests in the near future :)
